Got radishes?

Like bread and butter pickles,
but with a piquant radish spirit

Pickle them!
So, here we are again, shut in by a winter storm . . . IN MID APRIL. But we're not upset. We're not winter-fatigued. We're not losing our patience. We lost that two weeks ago. There's nothing else to do but pickle some radishes. You can make them too if you follow these simple directions:

You will need 2 cups of clean, sliced radishes and about 1/3 cup of sliced red onion. In a bowl, combine 1/2 cup white vinegar, 1/2 C sugar, one and a half teaspoons of salt. Stir or let it sit until sugar dissolves. Shovel the driveway while you wait. Put the sliced radishes and onion slices into clean jars. Add a few heads of fresh dill and several whole peppercorns to each jar. Stir the vinegar solution and pour into the jars. Cover and refrigerate for a day. Yields 2 cups.  ENJOY!
